Capellini accessory for Atlas 150
The Capellini accessory is one of the 13 home-made pasta accessories, compatible with the Atlas 150 pasta machine. You can use it by hand, with the specific crank, or with the Pastadrive motor.
Capellini are a type of pasta with a square diameter of 1 mm. The recommended thickness of the pasta sheet is position 8 or 9 on the adjustment knob of the pasta machine.
FUNCTIONS AND BENEFITS

Manufacture
The accessory is made of chrome steel with rollers made of food-grade anodised aluminium alloy and polymeric resin combs so as not to release metal particles onto the dough and guarantee a product that is 100% healthy and genuine.

Aluminium rollers
The anodised aluminium rollers feature an imperceptibly rough surface. The pasta comes out porous and binds more easily with the condiments used.

Easy assembly
The accessory is attached to the machine by inserting it into the appropriate guides for the cutting accessories. Once assembled it will be perfectly stable.

Simplified cleaning
You can clean the accessory with a cloth and a brush. Cleaning the rollers is also facilitated by the removable combs. The accessory is not dishwasher safe!

Pasta dough
INGREDIENTS:
- 250g soft-wheat “00” flour
- 250g durum wheat flour (semolina)
- 5 whole eggs and water up to a total of 250g
Pour the flour into a bowl, then the eggs and water in the middle.
Stir to mix all the ingredients.
Knead the dough with your hands until it is completely smooth and consistent. If the dough is too dry, add some water; if it is too sticky, add some flour. Perfect dough should never stick to your fingers.

Pasta sheets
Set the adjustment knob of the machine to 0. Feed a ball of dough through the rollers and turn the crank clockwise.
Lightly dust both sides of the pasta sheet with flour and fold it in half. Feed the pasta sheet through the smooth rollers again, for 5-6 times until the pasta sheet is long and regular in shape.
Set the adjustment knob to 1 and pass the pasta sheet through just once; then, set the adjustment knob to 2 and so on until thickness 8 or 9. Cut the pasta sheet crosswise, into pieces about 25cm long and dust them lightly with flour.

Cutting Capellini
Insert the crank in the accessory. Pass the pasta sheet through the rollers and collect the freshly cut Capellini with the Tacapasta stick. Lay them to dry on Tacapasta.
The pasta dries in about 1 hour and can then be stored in suitable kitchen containers.
Capellini can be eaten fresh, dried or frozen. For them to absorb the sauce well, we recommend eating them once dried.
